Serve with whipped cream or non-dairy topping. Serves 4 to 6. For soup, add 2 cups more water, V-s cup more Campari, and v2 cup sour cream. Mixture can be run through the blender to smooth. Despite the fact that this is Florida, the weather does get pretty chilly in the wintertime. So disregarding what the calendar says, there is a divine fruit dessert made with Campari which will bring summer right into your dining room. The dessert bowl will be emptied right down to the last blueberry but your spirit will be filled with sunshine. 'Fruits of Summer Campari' is a perfect dessert, especially for guests. It's easy to prepare and can be made ahead. It is a cool, luscious and pleasant "surprise" end to a good dinner. It is also not very fattening unless you go heavy on the whipped cream. The recipe with just a few changes can be used as a cold fruit soup in the summer, a sophisticated cooler-offer that will get you raves. But either way, it is the garnet-red Italian apertif, Campari, that gives its lively flavor to your frozen or fresh fruit to produce a uniquely zesty dessert or soup. Campari is only 48-proof (which could account for its soaring popularity at business lunches ) with a tangy flavor that balances the sweetened fruit. "Fruits of Summer Campari' freezes well, so when summer finally does roll around, take advantage of the fresh fruits in your market and made enough to keep summer in your freezer all year. 'Fruits of Summer Campari' Cook together in 16 cups water, l.z cup fresh or frozen blueberries, 1 orange unpeeled, sliced thin, 1 lemon unpeeled, sliced then, juice of 1 lemon, V cup Campari and Vz tsp. cinnamon at a simmer for 20 minutes. Add Vz cup sliced fresh or frozen strawberries, 2 cups pitted sweet cherries, and Vz cup honey. Stir, bring to boil. Blend lVz tblsps. cornstarch with 1 tblsp. water, mix into fruits, cook until fruits are soft, about 15 minutes, stirring frequent FRUITS OF SUMMER CAMPARI is a delicious compote of cooked citrus fruits, strawberries and blueberries, served chilled.
