Hot weather, Callaway explains, ripens grapes too quickly and upsets the delicate balance of sugar and acid that characterizes fine wine. Too much humidity such as in Florida causes grapes to rot. Although his vineyard was about 500 miles south of the traditional quality wine country, Callaway's bet paid off. His first vintage in 1973 was shipped up to the Napa Valley to be made into wine, and the results were good enough to encourage him to build his own winery. "All the pieces began to fall together," he says. In choosing Southern California, Callaway admits he kept in mind the fact that more high-priced wine (meaning over $3 for whites, over $5 for reds) is consumed within 125 miles of his vineyard than in any other area that size in the world. Southern California has 11 million people many of them wine buffs and Callaway knew they would buy a locally produced premium wine if only out of local pride. "We then found to our surprise that the story behind our wines grown in an area previously thought impossible was of great interest to wine buffs everywhere." Wine is very much a "story" business, Callaway says, one reason the back label on his bottles contains detailed technical data describing how the wine was made. In place of the usual sales pitch, the Callaway back label reads like a textbook. Yet soil, climate and eager consumers are not enough to guarantee fine wine. There is a large element of luck, as in any type of farming, and turning high-quality grapes into high-quality wine requires as much art as science. Callaway hired the best experts he could find. His chief consultant, for example, is Karl Werner, a former winemaster at the great Rhine estate of Schloss Vollrads. Although Callaway sells 70 per cent of his wine in California, he has begun shipping to 15 other states. As an example of the degree of control he exercises over his product from start to finish, he delivers directly' to Southern California restaurants and shops in temperature-controlled trucks the first time this has been done anywhere in the world, he believes. "Most wineries just don't give a damn." Although comparisons with European wines are inevitable, Callaway says, "We don't try to duplicate anyone, even in California. Our wines are distinctive on purpose." Callaway's most impressive product to date is his 1973 Late-Harvested Sweet Nancy, a smooth dessert wine made in the style of a noble German Beerenauslese and named for Callaway's wife. He discovered that his vineyard provided the right conditions, if the Chenin Blanc grapes were left on the vine later than usual, for the botrytis mold to shrivel them and thereby concentrate their sweetness. California Wine Consultants, an independent consumer group, called the result "an American dessert wine that will rival the finest in Europe." Sweet Nancy sells in Florida for $13.59, somewhat less than in California where demand has driven shop prices up. In addition to the Riesling served to the queen, Callaway produces five other varietals, priced from $3.65 to $6.55. Callaway's Chenin Blanc is distinctly less sweet than similar California wines, with a delicacy of flavor and lingering finish.
