Miss Lydia Carlson, 728 Thayer St. Modern Menus By GAYNOR MADDOX NEA Food and Markets Editor Pine bark stew--a savory southern dish- created to appeal to men's appetities. It Is a specialty in the pine country of South Carolina and it has traveled to Florida by way of one of its enthusiasts, Tom Smoot of Edison Park, a native of the Carolinas. He proudly serves it to groups of four or 40, ladling it from an old-fashioned iron kettle. This entree is at home in a Florida cabana or served from a chafing dish at a fireside supper.

True to its beginning. it features foods that please southern palates. In a sprightly seasoned creole sauce made with plenty of tomatoes to which the favorite wellbrowned salt pork is added for flavor, generous portions of fish fillets are gently cooked. Perch or any fish fillet may be used, The final touch is to spoon helpings of the stow over circles crisp French bread (triangles of enriched bread may be used. Pine bark stew makes an eXcellent one-dish meal.

A tossed salad, a relish tray, or a bowl of fresh fruit can be served to complete the menu. Pine Bark Stew (Yield: 2 quarts) One pound salt pork, 3 cups chopped onion, 3 cups or 1 (No. can tomatoes, cup vinegar, 1 cup catsup, 3 tablespoons Worcestershire sauce, few drops of Tabasco, 6 perch fillets 6 (i-inch) a slices French bread. Cube the salt pork into picces and brown well in a 3-quart pan or large skillet. Add onion, tomatoes, vinegar, catsup, Worcestshire sauce and Tabasco 1o taste.

Simmer 5 minutes. Add fish fillets and cook 10 to 12 minutes longer. Place one thick slice of French bread in each of six large soup bowls. Top with stew. TOMORROW'S DINNER: Melon cup, pine bark stew served on thick slices of French bread.

DAILY NEWS Total of $944.50 Will Be Distributed in School Premiums A list of school premiums, compiled by the office of the county superintendent of schools, shows that a total of $944.50 will be distributed among 850 Oneida- Rhinelander Hodag Fair exhibitors. Last year about 800 exhibitors received $996 and in 1954 there were 1,113 education exhibitors collecting $959 in prize money.
