POLLO CACCIATORE (Chicken-Hunter's Style) 1 ready-to-cook chicken, 3 % 2% to 3 Ibs. disjointed cup olive oil. scant 1 1 teaspoon paprika •! 1 finely sliced onion Vt cups canned tomatoes or 8 medium tomatoes clove garlic teaspoon salt teaspoon pepper Dry chicken. Cook gently in hot olive oil until well browned. Sprinkle with paprika to aid browning. Turn occasionally to brown evenly. Spoon, off 2 or- 3 tablespoons of oil. Add onions, tomatoes, garlic, salt and pepper. Cover tightly and simmer until chicken is tender, about % hour. If sauce is watery, remove chicken and simmer sauce for several minutes to thicken it. Return chicken to sauce. Remove garlic. Serves 5. Note: Flour, brown and cook giblets and neck with the chicken. If desired, before serving, cut neck in 3 sections and slice gizzard, heart and liver meat into thin slices and serve all in the" sauce. "S 1
