CHICKEN AND BROCCOLI CASSEROLE 1 chicken, 4 ft to 5 Ibs. 1 bunch broccoli, or 2 packages, frozen % cup flour 1 cup milk 2 cups chicken broth 1 cup mayonnaise 1 teaspoon lemon juice ^ teaspoon curry 'powder 1 to 2 cups buttered crumbs Cut up chicken. Add 5 cups of water, 1 teaspoon salt, 2 or 3 pepper-corns, 1 rib celery, 1 carrot and 1 small onion. Simmer until chicken Is tender. (This can be done the day before.) Remove chicken and strain broth. Cube chicken meat. Prepare sauce as follows: Blend flour and milk to a smooth consistency. Add chicken broth and cook, stirring constantly until uniformly thickened. Remove from heat and add mayonnaise, lemon juice and curry powder. Meanwhile cook broccoli until just tender. Drain and break into pieces onto heat-proof platter or shallow baking pan. Top with the chicken, then the sauce and the buttered crumbs. Bake in a moderate oven (350T.) until hot and crumbs are browned, about 45 minutes. Serves 6. CHICKEN - IN - THE - BASKET Wash chicken, dry. Combine cracker meal, salt and pepper in paper bag. Put chicken in bag a few pieces at a time; shake well to coat. Dip chicken in beaten eggs: shake again in paper bag. Fry in hot shallow fat; turning to brown. Cover; cook slowly about 45 minutes. CHICKEN CANTONESE 2 2 4 broiler-fryer, 2 Ms Ib. cut up cup flour tsp. paprika tsp. salt tsp. ground pepper pup lat cup pineapple juice cup orange juice tsp. s&\\ Vt 'tep. ground cloves V* tsp. ground nutmeg • Gravy Vt cup flour Ms cup water % cup pineapple cubes 1 orange, sectioned Ms cup almonds, slivered 2 Ms cups hot rice Coat chicken by shaking in a bag containing the flour, paprika, salt and pepper. Brown in lat. Blend ] 4 cup of the pineapple juice, ¥4 cup of the orange juice, salt, cloves and nutmeg. Pour over chicken. Cover and simmer until fork tender, 20 to 25 minutes. Turn pieces as necessary to prevent sticking. Blend the V* cup flour and the water until free of lumps. Combine with remaining I cup each of pineapple and orange juice. Cook in saucepan until thickened-, stirring constantly. Add pineapple cubes, orange sections and almonds. Pour over chicken and cook, uncovered, over low heat 10 minutes.
