EAD ORANGE BUTTERHORN ROLLS 44 cup warm water (not hot—110 to US') 1 pkg. active dry yeast V3 cup sugar 1 tip. salt 2 egg* W cup toft shortening 3te cupt enriched flour Orange Glaze In mixer bowl, dissolve yeast in warm water. Add sugar, salt, eggs, shortening and half of fiour. Beat 2 min., med. speed on mixer or 300 vigorous strokes by hand. Scrape sides and bottom of bowl frequently. Add remaining fiour and blend in with spoon until smooth. Cover with doth and let rise in warm place (85*) until double in bulk, about 45 min. (If kitchen is cool, place dough on a rack over a bowl of hot water and cover completely with a towel.) Stir down batter by beating 25 strokes. Turn onto floured board. Cut dough into 3 equal parts. Shape into crescent rolls by rolling each part into a 12" circle. Spread very thin with Orange Glaze. Cut each circle into 16 pie-shaped pieces and roll up starting from wide side. Place on greased baking sheet about 2" apart with point underneath. Again let rise in warm place (85*) until double in bulk, about 45 min. Heat oven to 400' (mod. hot). Bake 10 to 15 min., -until nicely browned. Spread remaining glaze on hot rolls. Makes 48 rolls. Orange Glaze: Mix 3 tbsp. soft butter, 1 tbsp. grated orange rind, 2 tbsp. orange juice and IX cups sifted confectioners' sugar. PRUNE FELLED ROLLS % cap lukewarm milk V* cup sugar 1 teaspoon salt Vt teaspoon nutmeg *A teaspoon grated lemon rind V* cup softened shortening (butter) 1 package yeast compressed or dry V* cup lukewarm water 3 eggs, wett beaten 4 cups aUfurppse flour Scald milk and cool to lukewarm; pour into bowl; stir in sugar, salt, nutmeg and lemon rind. Add shortening. Dissolve yeast in lukewarm water, stir into mflk mixture. Add well .beaten eggs. Beat in flour in two additions to make a soft dough. Turn put on lightly floured board and knead briefly. Place in greased bowl; cover with damp cloth and let rise until light about 2 hours. Roll dough out K-inch thick. Cut into several different shapes. Fill with Spiced Prune Filling and place on a greased baking sheet Let rise until light, about 30 minutes. Bake in a moderately hot oven, 400% 12 to 15 minutes or until lightly brown. Makes 2X dozen rolls.
