Phones: MW2771, MW2781, MW3791, BW1451 (3 ynuniiBi. mi uttnniKniirBi noan, the Melbourne Cup has held the public imagination the first Cup race took place in 1861 and never has it had a greater hold than to-day. For weeks past the newspapers have been telling us about the "form'! of the horses, and the radio announcers have been working their listeners to state of feverish excitement; Even ln the days before wireless the excitement was great enough, but nothing to what It Is ln these days. Indeed, it is doubtful whether the people who are on the course watching the race (comparatively f- in the great crowd get more than a passing glimpse of the horses) get a greater thrill out of it than those thousands who listen to the exciting broadcast description. There will be little work done in Australia to-day while "the Cup" is being run.

EVER since those seventeen horses galloped round the Flemlngton course on November 7, 1881, and Archer won the great race in three minutes 52 seconds, there has been a glamour about the Melbourne Cup and Its winners Archer, Carbine, and all the rest of them. Especially Carbine. "Old hands" still talk about "Carbine's year" as something to be forgotten. That wot the year 1890, when the original crowd of 4000 had grown to one of 100,000, and the prize-money had increased from 200 to 10,000. How many thousands are going to watch the race to-day? And what is the name of the horse that is going to become famous in our racing annals? BUT the glamour of the Melbourne Cup goes further than the horses.

It Is a grand parade of fashion. There, on the stands and lawns oi Flemlngton, society gathers in all its splendour. There Is a magnificence about those splendid animals which fight the race out, but there is something magnificent, too, in Fashion's great day out the loveliness of the ladies and their dresses, aflash with colour and Jewels the well-groomed men. To see the Melbourne Cup Is to see one of the world's finest spectacles, one that lives in the memory. It's a new experience to sit at a lolly pink table, on a Jade green chair, to receive your soup from an orange-coated waiter, your spaghetti from one ln blue, and to eat your salad from a plate quartered ln vivid colours. The lighting is simple, Just candles stuck in empty beer bottles. Weeks of dinners have covered them with a mass of coloured wax that drips down to form fantastic patterns. CHICKEN IN THE FINGERS. DO you like chicken, and have you any objection to eating it au natural that is, without a knife and fork? If you don't mind using your fingers, and you do like chicken, you will find Topsy's Roost most entertaining and satisfactory place.

It is perched on tt esplanade, looking out over the Golden Gate, and above it is written the proud boast: "We fry more chtoam than anyone else ln the world." When you look through the windows, you wouldn't dispute it. Docens of negro "mammies'' ln spotless white are busy beside vats of boiling fat, into which they plunge baskets of chickens. Fried golden brown, these are placed on cardboard plates and served to hungry diners. The cooks' white teeth flash as they laugh over their work, and their dusky arms are elbow-deep in flour, kneading the biscuits that complete the meal. Inside the building Is a dancing floor, surrounded by tiers of chicken coops on a large scale, each containing a table and chairs, and the walls above are painted with frescoes of chicken-stealing darkles.

If yw are seated in the top tier and want to dance, all you have to do is to come down a long slippery-slide, which is the favourite means of getting on to the floor. Rather slractlc, but quite in keeping with the spirit of Topsy's Roost. Of course, you can dine in state at a luxury hotel, and have a conventional' meal in conventional surroundlngsv but who woald want to do this when there are so many methods of dining with a difference ln San Francisco?
