Jenl Port Yalumba Chrlstobel's Classic Dry White 1994, $9.90 THIS fruit salad of semillon, sauvignon blanc and viognier is a crisp and refreshing style that should be consumed while young. Viognier is a rare variety that is flirting with a couple of wine companies; we will see more of it as an Individual varietal release. Back to the blend; it has a herbal nose with an undertone of tropical fruit. The palate is light but not delicate, there is some gooseberry semillon character, plus herbs and spice. Crisp acid completes the finish.

It can be served well chilled and is perfect with a bowl of tangy tamarind soup in a cheap and cheery Vietnamese restaurant. The message came from Sarah Morphew-Stephen, the visiting British master of wine, wine judge and wine buyer who was recently in Australia for the judging of the Sheraton Wine Awards in Perth, She was also a guest speaker at the Melbourne Wine Show awards, during which time she took the opportunity to address industry leaders with a three-part plea. "First, you must maintain your high quality standards and your reliability.

I can't overemphasise that. We have had excuses from the Europeans for years (for bad wines), but the strength of the Australian industry is that you can produce year in, year out, consistent, quality wines. "Second, you must be careful about your bulk wine exports. It is too easy to lose control over what is happening to your wine There are good people bottling wonderful wines (in the United Kingdom), but there is also an awful lot not like that. You have to protect yourselves.

"Third, please be realistic about plantings. There are countries like Hungary, Romania, Bulgaria, Chile, Argentina, Uraguay and (the former) Czechoslovakia competing against Australian wines in the UK and their production and shipping costs are a lot lower than yours." Ms Morphew-Stephen's theory about a worldwide glut of wine by 1997-98 is based on the extensive plantings of vineyards across the world in the past year and the fact that many of these will be bearing at the same time. The planting of vineyards has been running amok in countries such as Bulgaria, (the former) Czechoslovakia, the south of France and Chile. And almost every one of these countries has been successful in marketing wines in the Northern Hemisphere. There is a predictable glut in the making." Ms Morphew-Stephen added that shiraz remained "Australia's greatest pinot noir still had "immense potential, particularly in cooler climates" but that Australia had lost the opportunity to make more of its merlot wines with that market being taken up by Washington State and Bulgaria.

"People used to ask for the 'tit' wine," says blushing Taltarni executive Neil Fisher. "Others were calling it mother's milk. It was just a bit too embarrassing." The wine Taltarni's Aureola merlotcabernet sauvignon was simply too close in pronunciation and spelling to areola, an intimate part of a woman's anatomy.

Aureola means a halo, which originally was felt to fit in well with Taltarni's label featuring the biblical scene The Denial of St Peter. So, barely a year after the release of the first 1991 vintage, the wine has reverted to its varietal labelling, much to the sighs of relief no doubt from Taltarni cellar door staff, who are mostly women. The company has also taken the opportunity to soften the wine a little more, making it a little easier to drink when young than the first release. In fact, the name change is just one of a number of interesting changes in the offing at Taltarni. In future, the (unwooded) sauvignon blanc and the (former Aureola) merlot cabernet become matching pairs aimed at the bistro market (around with matching style presentation.

Taltarni's white flagship fume blanc is about to have a name change in favor of the gradual introduction of the term reserve sauvignon blanc.
