At 32, Otto Kamenzin Is one of a handful of chefs at the top of his art in Melbourne. Otto described his beginning in Germany: "I did my apprenticeship in Bremen. What happens Is you go into an hotel where you start as an apprentice and they show you through everything. You do a year outside and then you do three years in the kitchen. In those three years you go two days a week to school.

"Then you do a couple of years as what they call a commie when you go to the best places you can get Into and change every' half-year or so to get a bit of experience. "I did that for a couple of years and then I went into the merchant navy to travel round a bit on the Greek ships and then on the Sit-mar Line. And I settled here. I just like it. I've more or less spent my youth here and I've just grown to like it; "When I came here It was October, 1955 I worked for a couple of months at the Elizabeth.

Then I became chef at the Beach Hotel, Hobart, for about eight months. I came back to Melbourne, started at the Graham opened the Graham, actually, as second chef. "Then, after three months, the brewery opened Hosies and I went over and opened there as second chef also. "Then Scott's Hotel as a second only stayed there about three months because a very good position was offered to me at the St. Kilda Yacht Club.

It's in my blood now. I chose to be a cook when I was about 14. My uncle was a chef, one of the leading chefs in Heidelberg. He inspired me. He let me help him.

"I never wanted to be anything else. But I think it's one of the hardest professions you can think of, beside being a doctor." Are chefs temperamental "No. That's all rot. They have their moments. Well, like today between one and two.

It was pretty hectic in restaurant World class. Antonio's and Maxim's are two of the best restaurants in Melbourne. I was chef there at Antonio's for nearly seven years. I left to open the Lido but the whole thing was too big and I went back to AntonioTs four weeks after the Lido opened. "Zobel, an American fellow, travelled the whole world and put out the book Global Prom Melbourne, there's only one restaurant, which is Antonio's.

"There's a recipe under my own name in it. Filet de boeuf Kamenzin. It's just a long, eye fillet filled with a chicken which is specially prepared. You cook the chicken and dice it and you make a sort of ragout out of it and stuff it into the fillet and the steak is done to your taste. We served it with a mushroom sauce.

Very nice." Why do chefs move around "I feel, at the moment, I'm pretty young still. I think the more you move the more experience you get. It doesn't matter how much you know, you always learn." Can Melbourne train its own chefs yet "No, I don't think so. You've got to have overseas experience.
