HOW IT IS CONDUCTED 1 Ltiu Ji Tke Eatsrprlaa Emtlruly ecesaftel An Invitation was yesterday extended to the representatives of the Detroit daily press to visit the new Cheese actory iD ojfentloH near armington Oakland cyunty which was daly accepted and a pleasant three hoars ride brought them to the above teamed locality The Maplo Grove Cheese actory ia situated one mile southwest from armington and is conducted somewhat on the plan of the New York factories This enterprise waa originated by Mr James Wilbur and Abraham Lapham who after securing the active 'aid of live other able farmers succeeded in ornring a com pany securing the requisite capital and placing the project on a substantial basis A lease of the necessary ground was then obtained and a suitable building erected at a cost in" eluding machinery of 87000 The factory building is three stories in height one hundred feet in length by thirty in width and has stor age capacity for 2000 cheese Manufacturing was commenced on the 23d day of May last and the daily product up to this time has aver aged 1200 pounds The milk of 730 cows is delivered i twice a day ownership this number being vested in the forty patrons of the factory: t' i i Each patron supplies himself with large cans in which the milk is carried to the factory where it is lifted from the wagon by machinery and emptied into receiving cans which rest upon platform scales in the basement story Tho weight is accurately taken and the amount credited to tho party bringing it and it is then run into the curding vats of which there are three having a capacity of 5000 lbs each A stream of cold spring water runs through a box surrounding the vats which keeps the milk received at night at a low tem perature which insures its preservation in a fit state for use in the morning PROCESS CHBBSB MAKING The vata being filled to a sufficient depth the flow of water in the box surrounding the vat is stopped and the temperature of the water which communicates its heat to the con tents of the vat raised by means of furnaces underneath each vat to eigbty tbree or eighty five degrees Rennet is then added it stands about forty minutes when it is found to have thickeucd otaet sufficiently strong and is cut up by patent multiple bladed knife in cubes of half an inch After cutting it stands fifteen minutes when the whey rises settles The
