Serves 8 to 10. (The crab-meat is Alaskan; it's just cooked in Coolidge.) Crown of Spinoch and Artichoke 2 packages (10-oz.) chopped spinach 1 can mushroom pieces, drained 6 tablespoons batter 1 tablespoon flour Vt cup milk Vi teaspoon salt Dashes of dry mustard and red pepper 1 can (6-oz.) mushroom caps 1 can (pound) artichoke bottoms, drained Cook spinach according to directions, drain and mash. Saute mushroom crowns in butter; remove and set aside. Add flour to melted butter and cook until bubbly. Blend in milk and stir until smooth.

Add seasonings, mushroom pieces and spinach. Place artichoke bottoms on the bottom of a buttered casserole dish and cover with spinach mixture. Over that, pour Sour Cream Sauce, then arrange mushroom caps over all. Heat through and serve at once. Sour Cream Sauce: Vi cup sour cream, Vi cup mayonnaise and 2 tablespoons lemon juice.

When Jewell was in the seventh grade, her father, Ernest W. McFar-und, was elected to the U.S. Senate. Whether in Florence or Washington, D.C, she recalled, her childhood was not spent in the kitchen. "My mother never let me cook.

She said anyone who could read a cookbook could cook. My job was to get an education." Jewell got a bachelor of arts at the University of Arizona and a master's at George Washington University. "Then Del and I got married in Washington and our first year was very painful as I read my cookbook. He could pour cereal. We both worked ana I struggled with a split-second breakfast while he defrosted the car.

I didn't begin collecting recipes until we moved home. Dad needed someone to manage the farm. That's when Del changed from engineer to farmer." Later, his father-in-law offered Del another challenge. As judge, senator and Arizona governor, Ernest McFar-land had always been interested in communications. His founding of Arizona Television Company, that owns and operates KTVK, brought Lewis back to Phoenix, where he had grown up.

"I've been an officer since the outset and the first ten years we saw nothing but red ink," he said. "Jewell's dad wants this to be a family corporation. All Arizonans. To keep it local. Our thrust is the state.

Most nights, by sundown, Del is carrying news of them home. "The kids have the best of two and enough work to teach them a few lessons in economics. Both older boys have land to put out in cotton and my FFA boy raised okra last year." But it is corn that gets the whole family moving. When Mexican June corn comes in it is pick-and-sell and make-tamale time. "Folks call for up to twenty dozen ears.

We need maybe twenty boys to help get it boxed and ready. You can't let it dry out. The kids set up roadside stands and it all helps their math considerably." Chalupa and tamales are the real reward.
