MAIL Make Your Own Christmas REPUBLIC CITY Pass The Tamales, Please By NOEL OSMENT Almost as much a part of Christmas as the pinata in Sonora, Mexico, is the sweet tamale. This holiday specialty, which features raisins and a delightful taste of licorice, is usually served Christmas Eve after midnight mass, with cups of good strong coffee. Mrs. Elias Escalante, who came to Phoenix from a small village in Sonora 27 years ago, carried this delightful tradition over the border with her, providing a yearly treat to look forward to for many of the Escalantes' friends. Always ready to share in the preparations are the Escalantes' daughter, Sendra; son, Florencio; and daughter-in-law, Connie.

And in another year or so, Elias III, son of Connie and her late husband, Elias will be tall enough to reach up and swipe some raisins during the making of the tamales. To make the tamales, use the following ingredients: 3 pounds of maza (ground corn which can be purchased ready to use) 2 pounds lard 1 teaspoon baking powder 1 pound brown sugar cup walnuts, smashed. (Mrs. Escalante uses a rolling pin) small cellophane bag of anise seed Salt to taste Corn husks (these can also be bought separately) Method: Stir lard until foamy. Mix in maza, and then stir in the rest of the ingredients.

Wash the corn husks and spread with the mixture. Fold them up and put them into a big pot to steam. For two dozen tamales, use about 2 cups of water in the bottom of the pot, and place a wet cloth over the top. Steam 35 to 45 minutes. This recipe makes about seven dozen tamales.
