January 31. 1986 Dining Out at Coppola's La Fantasia Ristorante By Ltrry Hertz When I heard that the best Italian restaurant in the Mid Hudson Valley was moving to a new location, I feared the owners might be tempted to tinker with a good thing True, the quarters were a bit cramped in Coppola's old building in the hamlet of Highland, and it was often difficult to eat a meal without overhearing two or three other conversations. But the service was always courteous and efficient And the food was always delicious and reasonably priced wondered Could a fancy, new Coppola's retain the charm and the cuisine of the old place downtown? It could. And it has.

The clutter and cramped quarters are gone. The friendliness, efficiency and good food have been shipped, intact, to Coppola's La Fantasia Ristorante. The first thing you notice about this restaurant is the clean, uncluttered look of the place. The gray wallpaper, the large mirrors, and the mated tones of the waitresses uniforms make the dining room an easy place for the senses to digest We were greeted by a hostess with Coppola's La Fantasia Risto rante, Route 9W, Highland. 691 7832.

Description: Modern, taste folly decorated dining room. A five foot hlgh mirror runs the lentgth of the far wan of the room, making It appear to be even more spsctoas than It is. Tables are covered with linen tablecloths. Neutral colors give the room an open uncluttered feeling. Open: Tuesday through Thursday 11:30 ajn.

The people at Coppola's obviously know how to make that sometimes awkward transition from the outside of the restaurant t4 the table an effortless experience. The menu is about the same as its predecessor's.

The appetizers are fairly routine, except for the hot an tipasto a generous plate full of mussels, stuffed clams, stuffed mushrooms and other goodies. It's priced at S3 25 but there's plenty of food for twq or three. I The salads aren't fancy. They are mostly lettuce. But it's crisp, fresh, tasty lettuce.

The minestrone soup, jam packed with fresh vegetables, is the best I have ever had anywhere. You can spend an hour deciding on an entree especially if you've been there, before and know that almost anything you choose is likely to be delicious. There are always five or six chef's specials. My favorite is the "chicken combination" (19 95), a plate full of chicken and veal topped with ught, delicate and delicious marsala sauce. In fact, all of the marsala dishes I have tried have been excellent The chef obviously knows something that many other chefs do not that sauce should complement the meat It's adorning, not overpower it In other words, you can taste the chicken in the chicken marsala, not just the marsala.

The last time I visited La Fantasia, I resisted the temptation to have the marsala again and opted for the chicken cacdatore. As I expected, the tomato based sauce was tangy and delicious. And, as I expected, it didn't overpower the taste of the juicy, boneless chunks of chicken underneath. But the heart of any Italian res taurant is its pasta and the pasta here Is excellent The spaghetti offered as a tide dish with most other meals was firm and flavorful. The fetucdne alfredo was delivered al dente, as ordered, and the creamy sauce was light and tasty.

Often, eating a plate full of pasta makes me feel overstuffed. This has never been the case at Coppola's. The portion sizes are just right Perhaps the weakest part of the menu at La Fantasia is dessert There's tortooi and spumoni, of course, and a selection of eclairs and other pastries. It's all standard fare, nothing really to complain about bu nothing spectacular, either. Picking up the check at La Fanta sia Is easy.
