Dining Out at Marcel's By Oerry Raker Joanwl staff Once you visit Marcel's you will understand why there's usually a wait for a table on Saturday nights (unless you arrive. before 7) and why the restaurant has such staying power. It's cozy; the service Is very professional; many of the dishes are delectable; prices are moderate for value received; and you begin smelling the garlic while you're still in the parking lot. But not to worry. The garlic is well Integrated into the food, whether It's bread, poultry or vegetables.

Mosfentrees are in the $12 and II range and the good house salad with its clear, tart vinaigrette dressing is Included. The wine list is handsome to behold and reasonably priced. A full litre of very acceptable Bou cheron. one or the house wines, is 18.50. something to enjoy with a 'basket of warm garlic bread while mulling over the menu that offers a baker's dozen of entrees In addition to a few nightly specials.

The Waiters, engagingly costumed in dark green aprons, are knowledgable and provide pleasant, efficient service, including the presentation of fresh silver on a ft ft ft 12 Marcel's. Poulet provencale (I11.S0). was four thick medallions of chicken In a fresh tomato and wine sauce that wai heavenly although heavily suffused with garlic as. were the green beans and mushrooms with olives. A wonderfully prepared dish. Another night, sole sauteed with shallots, poached In white wine and topped with almonds ($12) was delicate and superb.

Veal of the day prepared with artichokes, marsala wine, mushrooms and melted Swiss cheese, was pleasant. Only fair was the rack of baby lamb With six chops to the portion, it was certainly reasonable but it was New Zealand lamb which requires more seasoning to make it a good dish. That night, cauliflower topped with herbs and cheese, was delectable. Rice had a nice, nutty flavor. Among the appetizers recently sampled were beer battered, shrimp with cognac sauce (15.50.) These crisp, light, appealing shrimp didn't even need their slightly too sweet sauce.

A special appetizer of warm shrimp mousse (15.50) was delicate" with a pleasing veloute sauce. Baked stuffed clams another special ap petizer, was one large shell, the moist stuffing Just a bit too heavy on what seemed like sage. I'm sorry I didn't try the escargots, a regular appetizer at $4.50. Mussel soup of the day although a bit floury, was a well flavored, creamy version, the mussels plump and fresh. French onion soup ($2.50) was hearty with plenty of cheese and a rich stock.

Desserts ($2) are worth ordering and savoring. A white chocolate mousse had the consistency of dense, freshly whipped cream with many flecks of white chocolate. If you closed your eyes, you'd have had trouble Identifying this delightful concoction. Kalhua cheesecake was a tantatalizlng mixture of tastes and textures. Russian creme.

made of sour cream, sweet cream and Chambord (rasp berry liqueur) with a melba sauce was smooth and outstandingly refreshing. Chocolate mousse cake with shaved chocolate on top was properly rich. Coffee is very good; decaffeinated is brewed and equally good of its kind.
