HEARTY PARTY ROLLS SHRIMP BOAT-BURGERS 6 servings V4 1 1 tablespoon instant minced onion or, V* cup finely- chopped raw onion 2 tablespoons wine vinegar or lemon juice % cup mayonnaise 1 teaspoon salt 2 to 3 cups cooked chicken, turkey, ham or tuna pieces (or other meat or fish) V& cup chopped green pepper (optional) * Measure instant minced onion into vinegar and let stand 5 minutes; combine with mayonnaise and salt. Toss with chicken and refrigerate several hours to blend flavors. When ready to serve, add green pepper, celery, coarsely chopped, hard-cooked egg and almonds. Cut deep, long slit in top of rolls and hollow out most of soft inside. Brush inside with butter and sprinkle with cheese. Toast in a very hot oven (450 degrees F.) or under broiler for about 5 minutes. Arrange a few small lettuce leaves in roll and fill generously with salad mixture. Garnish with ripe olives.
