Whether you cook out or in, they are always welcome but especially if you grill them outside. Although some youngsters will hold out for the tried and true plain burger, the more adventurous spirits will approve of adding new flavors and textures.

The Dill Burger is prepared by adding dill weed and horseradish to the meat mixture and topping each cooked burger with a swiss cheese slice and bacon curl. Neapolitan Burgers are spiced with ore- gano and garlic, topped with slices of provolone cheese, tomato and onion and a red or green cherry pepper. Avocado topping and a hot pepper or black olive complete the chili-flavored Mexican Burger. Plan to cook these beefy burgers outdoors on a lightly greased grill about 3 to 4 inches afbove a bed of glowing coals. Turn the burgers with a spatula or long tongs since piercing the burgers with a fork will cause them to lose flavorful juices.

Top each hot burger with a slice of swiss cheese and a bacon curl; heat until cheese softens. Garnish with a sprig of fresh dill or watercress. NEAPOLITAN BURGERS: Follow recipe for Plain and Fancy Beefy Burgers and add 1 teaspoon oregano and 1 small clove garlic, minced, to meat mixture. Cook as directed above. Top each hot burger with a slice of provolone cheese; heat to soften cheese.

Top with a thin slice of tomato and onion and a red or green cherry pepper. MEXICAN BURGERS Follow recipe for Plain and Fancy Beefy Burgers and add 1 teaspoon chili powder to meat mixture. Cook as directed above. Prepare topping.
