Wednesday, July 28,1993 • Herald-ZeituriS • 7 Kitchen From Page 6 1/2 cup buttermilk, added 1/4 cup at a time Beat on med. speed for 2 min. Add remaining 1/4 cup buttermilk and beat 2 min. more. Pour batter into a greased and floured 9" square or round baking dish. Sprinkle topping over batter. Bake in a 350 degree oven for 30 to 35 min. Serve for breakfast or as a dessert. From: Shan Kasberg (Pis tacftio Puddi Comal County records 1 small pkg. sugar-free or reg. pistachio instant pudding mix 1 (1 5 oz.) can crushed pineapple, with juice 1/2 cup chopped pecans 1/4 cup drained and chopped marischino cherries 1 small container Cool Whip Light Stir all ingredients, except Cool Whip, together until thick. Fold in Cool Whip. Refrigerate overnight before serving. From: Margaret Burns Oma 's Peanut 'Butter Coof&s 3/4 cup creamy peanut butter l/2cupCrisco 1 1/4 cups brown sugar 3 tablespoons milk 1 tablespoon vanilla legg 1 3/4 cups flour 3/4 teaspoon salt 3/4 teaspoon baking soda Combine peanut butter, Crisco, sugar, milk and vanilla in a large bowl and beat at med. speed until well blended. Add egg and beat untilblended. Sift together remaining ingredients and add to creamed mixture, beat until just blended. Drop by teaspoonfuls on ungreased cookie sheets. Mash tops with fork. Bake in 375 degree oven for 7 to 8 min., until just set and beginning to brown. Cool 2 min. on cookie sheet, then remove to rack to cool. From: Laurie Tieman 'Eggpfant Stromboti \ med. eggplant, peeled and cut into 1/2" cubes 1 med. onion, chopped 1 bell pepper, chopped 1 cup sliced mushrooms 2 med. tomatoes, chopped 1/2 cup black olives, sliced (optional) 1 teaspoon minced garlic 1 teaspoon Italian seasoning 1 small jar commercial tomato sauce (Prego, Ragu, etc.) 2 loaves frozen bread dough, thawed 1 to 1 1/2 cups grated mozzarella or provolone cheese Combine eggplant, onion, bell pepper, mushrooms and garlic. Put a little olive oil in a large saucepan and saute combined ingredients until tender. Add tomatoes and saute until tender. Combine tomato sauce and Italian seasoning with vegetables and simmer 10 min. Place 1 loaf of bread dough on a lightly greased baking pan with edges. Pat out dough to within 1/2" of each pan edge. Place vegetable mixture on dough and spread to within 1" of each edge. Spread with cheese. Pat out the remaining dough on a separate surface until the dough has the same dimensions of the first loaf. Place on top of the vegetables and cheese. Moisten edges of the dough with water. Press edges together securely to seal. Bake in a 350 degree oven for 20 to 22 min. Serves 8.
