KITSEL. One pound flour; pound sweet butter; pint sour cream; five egg yolks; salt. Mix all together and knead well. After it is well kneaded, dip out with a spoon and roll In hands until the size of a walnut. Place on cookie sheet and let rest on ice at least an hour or even overnight.

When thoroughly cold, roll out in a round shape but not too thin. For the filling, use pound pecans (or walnuts) ground very fine and almost all of a whole pound of powdered sugar; five egg whites beaten well, few drops almond extract. Put a teaspoon of this filling on each of the round pieces of dough you have rolled out. Roll up lightly but you'll have to pinch a little with your fingers so the filling stays in. Turn over on the cookie sheet so that the edge is underneath.
