V By WAXDA JONES Valentine's day is an occasion for entertaining:. But even if you aren't planning z. party, you'll like to surprise your family with e dessert for that special day. So here's a new recipe for your collection. It's a chiffon pie filling made with a currant-raspberry flavored pudding mix. Raspberry Chiffon Pie 1 nkg. frozen raspberries 1 t>kg. pudding mix, raspberry flavored 3 egg whites 1 nine-inch pastry crust Thaw berries and drain well- Measure juice and add enough water to make 1 cup liquid?. Stir in contents of pkg. of pudding mix. Add raspberries. Bring to a full boil; boil for 1 minute, stirring constantly. Beat eg? whites until stiff, but not dry. Pour hot pudding mix over egg whites, ti little at a time, beating continually. Pile chiffon filling- into pastry crust. Let cool. Chill 4 hours. Garnish with whipped cream. . With frills and hearts the theme on Valentine's Day, dainty Rosy Chiffon Tarts are the perfect dessert for your bridge crowd. Rosy Chiffon Tarts \ 1 A cups water 1 pkg. pudding mix, raspberry flavored 3 egg whites 6 to 8 baked tart shells. Stir contents of package of pudding mix into water. Bring to a full boil for 1 minute stirring con stantly. Beat egg whites until stiff, but not dry. Pour hot pudding mix over egg whites, a little at a time, beating continually. Pile chiffon filling into tart shells. Let cool. Chill 3 to 4 hours. When ready to serve, garnish with whipped cream. (For a taste treat: use V. cup port wine in place of % cup of water, or use 1 cup orange juice for an equal amount of water.) Here's a dessert to follow-up Saturday's Valentine feast. Cherry Chiffon 1*« cups liquid (cherry juice and water) 1 pkg. pudding mix, cherry flavored 3 egg whites 1 cup pitted sweet cherries Stir contents of pkg. of pudding mix into fruit juice and water. Bring to a full boil; boil for 1 minute, stirring constantly. Beat egg whites until stiff, but not dry. Pour hot pudding mix over egg whites, a little at a time, beating continually. Fold in cherries. Chill chiffon 3 to 4 hours. Serve plain or with whipped cream. Back to parties, again—how about getting out the ole heart cutter and making some heart- shaped sandwiches for the Valentine gathering. And try these tasty sandwich fillings. Cucumber-Tuna and Egg Salad 3 hard-cooked eggs, chopped ^t cup diced cucumber % tsp. salt, dash pepprr 2Yi tbsp. saled dressing 3 i cup tuna Combine all ingredients; use immediately. Stakes about IVi cup filling, sufficent for 6 sandwiches. Ham and Cheese Spread. 2 cups boiled ham 2 cups grated cheese *~ cup diced 1 olives salad dressing Combine ham and cheese; blend with olives and enough salad dressing to give spreading consistency. Enough filling for 10 to 15 sandwiches. > Here are a few other suggestions for sandwich fillings: Raisins and nuts worked into cream cheese. Cream cheese and crushed pineapple. Peanut butter and bananas. Currant jam and nutmeats. Cottage cheese, pimentos, pickles. Minced 1 corn beef, pickles and mustard. So far these Valenetine delicacies have been confined to desserts, but here's a special meat course in Feb. 14 flavor. Valentine Meat Pie 1^2 Ibs. boneless beef, veal or lamb, cut in 2-inch pieces 3 tbsp. lard or drippings o3.Lt Pepper 1 cup water 1 lb. green beans or 1 No. 2 can green beans 12 small carrots 6 small white onions Heart-shaped biscuits. Brown meat in lard or drippings. Season. Add water, cover and simmer 2 hours. Add fresh green beans, carrots and onions and simmer until meat and vegetables are almost done. If canned green beans are used, they may be added at tiiis lime. Place heart-shaped biscuits on meat mixture and bake in a hot oven (400 F) for 12 to 15 minutes. 4 to 6 servings. Biscuits 2 cups sifted enriched flour 1 tbsp. baking powder % tsp. salt 4 to 6 tbsp. lard 1-3 to % cup milk. Sift together flour, baking powder and salt Cut in lard until mixture has fine even crumb. Add enough milk to make a soft dough. Turn onto a lightly floured surface and knead gently for Vz minute. Pat or roll % inch thick and cut with a heart-shaoed cutter, dipped in flour.
