MARZIPAN 2 ecg whites 1 cup almond paste 2 teaspoon lemon extract (optional) 1 cup confectioners' .sugar Confectioners' sugar (about 1 cup) Beat egg whites until stiff. Mix with almond paste and flavoring and add confectioners' sugar, enough to make the mixture stiff enough to handle. Knead the paste and mold it into any desired shapes. Roll in equal parts of cocoa and s igar Or let stand overnight on a damp noth Color as desired with vegetable coloring which car, be painted on with a clean pastry or paitit brush. Wrap each piece separately in waxed paper. Store closely covered in a cool place. NOTE- Almond paste is available in cans in the Cincinnati area. Marzipan may also be used to stuff datei or prunes This is great for those who find straight marzipan to i sweet. He very careful when storing t;.e rnarz.pan bec-aus- r d xs dry out. ,
