August 3. 1976--5 BY MARGO PHASER SUN Family Lite Editor Denise Houchln's favorite recipe is a winner. Homemartp hamburger buns, prepared by Denise, look (irsl place in the State 4-H Round-up in Tucson. Denise, 15, lives with her parents, Mr. and Mrs. Donald Houchin, live sislers and brothers and five loster sisters and brothers in a large, comfortable house just south of Flagstaff. The house is set in the pines and the family has plenty of land, something Denise said the family values very much. Demise's horse, "Charlie" is a family pleasure, with all members of the family riding the horse often on the land they own. Denise said she has learned a lot of cooking from watching and helping her mother in the kitchen. Her classes in 4-H have also helped her a great deal. Denise has taken three food classes, including one on breads, where she learned to make her prize winning hamburger hamburger buns. She said one of her unofficial jobs at home is to make all the cookies and cakes for the family. "That can involve a lot of work, because there are a lot of us," said Denise. "I do like cooking and baking though," said Denise who said she would like to be a 4-H leader herself some day. Denise started in 4-H five years ago and has really had fun being a member of the organization. "I like it so much I will continue with it until I'm too old for it," she said. Denise explained that eligibility /or 4-H requires that a person bo 19 years of age or younger. Signing up !or a class costs only $1 said Denise and that money is to cover insurance insurance for away (rips. Denise said the classes start in October and end in May and that the meetings arc usually held in the leaders home, a few nights a month. We meet for a few hours for our classes, depending upon what kind of class it is," she said. Then in May, every 1-H member is required to attend the country round up and winners in those competitions go on to the state round up and compete with 4-H members from throughout the state, said Denise. "It was really fun going to the slate round-up," said Denise. Denise was judged in the foods/nutrition competition competition on her knowledge of nutrition, her preparation of the buns and how well she presented her demonstration. "I think 4-H has been really good for me, because I have learned a lot and made a lot of friends through it," she said. Now a junior leader, Denise is preparing herself to become a leader. "1 will already have been through it so I will know how to lead," she said. Denise said she enjoys being a member of a large family and finds it "lots of fun." "It is different having so many people in one family but it is fun and a good feeling," she said Denise said her family has had a foster parent license for a few years now and the family has enjoyed the children. "We never know how many we will have with us or for how long," said Denise. Flight now we have five and they have been with us lor at least half a year and up to one year," she said. She explained that it is not unusual to have a child for just a few days or a week or two. "It.is fun to always have little kids around, and I think that's my favorite part of it all," said Denise. It's always hard to see them leave said Denise. "II seems like I'm really their sister," she said. Denise will enter Flagstaff High School this fall, along with her twin brother Dennis. "We don't have any classes together though." Besides cooking Denise enjoys sewing, reading and riding her horse. A few of her favorite recipes, including the recipe [or hamburger buns, follows. , .4PPLE SAUCE SPICE CAKE 1 spice cake mix l 1 ^ c. applesauce 1 1 t. cinnamin 1 t. baking soda t c. raisins 1 c. chopped walnuts Follow recipe on cake mil box, substituting the applesauce for the water. Combine cinnamin and baking soda into cake mixture. Blend in raisins and wabiuts. Cut mixing time in half and bake according to box recipe. Frost with desired frosting. fl Jl.TEI) SAI.A1) 1 head romaine lettuce · 1 head red lettuce 3 boiled eggs 4 slices crumbled bacon DRESSING 1 t. salt 2 T. bacon drippings v, t. dill seed 2 t. sugar W c. vinegar Vi c. water Combine lettuces, bacon and eggs in large bowl. Heat dressing to boiling point, pour over greens and serve immediately. immediately. TACO SALAD 1 head lettuce 3 medium tomatoes 2 c. grated cheese 1 c. olives 1 avacado 1 can drained ranch style beans (23 oz.) I Ib. hamburger 1 pkg. fritos corn chips 1 pkg. good Seasons Italian dressing Drown hamburger and chop finely. In large bowl combine lettuces, avacado, tomatoes, cheese and mix well. While mixing, add fritos, beans, mixed dressing and warm hamburger. hamburger. Serve immediately. HAMBURGER BUNS 5%-*% c. flour 6 c. powdered milk Vi c. sugar 2 pkgs. yeast Vi c. softened margarine 2 c. very warm water 1 T. salt In large bowl, mix two cups of flour, milk, sugar, yeast, margarine, salt. Gradually add very warm water and beat for two minutes at medium speed, add %tup flour and beat for two minutes at high speed. Stir in enough additional flour to make stiff dough. Turn on lightly floured board and knead for eight-ten minutes, or until dough is smooth and elastic. Place in greased bowl, turning to grease top. Cover, let rise until doubled in bulk, about 45 minutes. Punch down and let rise again for 20 minutes or until doubled again. Divide dough in half. Place on greased baking sheet, two inches apart. Press to flatten, cover with cloth. Let rise in a warm place until doubled in bulk again, about one hour. Bake at 375 degrees for 15-20 minutes, or until golden brown. Remove from oven and cool on wire racks. To make sesame seed buns: Before baking brush on mixture of one egg white and two tablespoons water. Then sprinkle with sesame seeds. The same may be done with onion flakes, dill seed or any- other desired seasoning. Top Winner DENISE HOUCHIN says her horse "Charlie" is one ol her favorite pleasures.
