One-Egg Wonder Cake 2 cups sifted cake flour. 2 teaspoons baking powder. i teaspoon salt i or 1-3 cup shortening. 1 cup sugar. 1 egg, unbeaten. 1 cup milk. 1 teaspoon vanilla. Method Sift flour once, measure, add baking powder and salt, and sift together three times. Cream shortening, add sugar gradually, and cream together well. Add egg and beat very thoroughly. Add flour, alternately with milk, a small amount at a time, beating after each addition until smooth. Add vanilla. Bake in two greased 8-inch layer pans or in greased large cup-cake pans in moderate oven (375 degrees Fah.) 20 to 25 minutes. Spread with sun-fruit topping. Sun-Fruit Topping 2 cup ground raisins, figs, or cookea prunes. 3 tablespoons sugar. 1 tablespoon grated orange rind. 1-3 cup water (or prune juice) Dash of salt 11 teaspoons lemon juice. Nut meats, coarsely chopped. Method Combine all ingre dients except nut meats in small saucepan; mix well. -Cook gently and stir 5 minutes, or until slight ly thick. Cool. Spread on cake and sprinkle with . nut meats. Makes topping for two 8-inch lay ers or 12 large cup cakes.
