And I'm so glad, I always lock forward to it, from the first early peas until the last turnips in the falL That's because garden-picked vegetables are so delicious. But make sure you give fresh vegetables the same tender, loving care in preparation and cooking as they had when growing on the farm or in your garden. Unless you pick the vegetables an hour or so before cooking, you should keep them in a cool place, or store them in the vegetable compartment or in plastic bags in your refrigerator. Before storing, I like to rinse or wash the vegetables so they're ready to use when taken from the refrigerator.

Then, too, cashing leafy vegetables before-hand adds the moisture needed for high-humidity storage. When washing greens, such as spinach or chard, or vegetables like brussel sprouts or broccoli, use lukewarm water. It helps to release the tiny dirt or sand particles more easily. Then rinse thoroughly in cold water before storing or cooking. If you slice or dice vegetables, like beans or carrots, do this just before cooking.

Cooking is another important step. Whether it's a leafy or root vegetable, a seed vegetable like corn, or a green, yellow, or white vegetable like potatoes, the basic cooking rules are exactly the same. First of all, always use a saucepan with a flat bottom and a tight-fitting cover. Then, all of the heat will go into the utensil and you won't waste it. And the food will cook faster, too.

The target is the corporate slush fund. Since Watergate, it has been revealed that some of the biggest and the best-known corporations in America have maintained secret illegal funds to: --Buy political favors in America, and --Bribe foreign officials. Seventeen firms have pleaded guilty to illegal campaign contributions. A variety of devices was used to cover them up- Most have been punished by the fines allowed under law. No corporate officer involved in the crimes was sent to jail However, two milk cooperative officials were sentenced to serve four months each.

The international aspects are much more complex. The revelations come as a result of investigations by the Security and Exchange Commission and by the Defense Department --mostly the former. The SEC interest is in the question whether stockholders in the corporations are entitled to know what is being done with their money, and especially when illegality is involved. It has forced some corporations to reveal the extent of the slush funds. Morality aside, there is a practical side to the question.
